Chocolate Crinkles


This is another one of my all time favorite cookies. I posted this recipe last year, but I'm reposting it now (with better pictures). This is a great Christmas cookie. Especially if you're like me and you're giving everyone cookies for Christmas. Who has money for presents? 

Chocolate Crinkles
1/2 c vegetable oil
4 squares unsweetened baking chocolate (1 oz each)
2 c sugar
3 eggs, room temperature
2 t vanilla
2 c rice flour mix
1/2 t xanthan gum
1/4 t salt
1 t baking powder
confectioners sugar

Melt chocolate, then mix with oil and sugar. Mix in eggs, one at a time. (If your eggs are cold, it will cause the warm chocolate to stiffen up and then you will have to warm up your dough somehow, so don't do that - use warm eggs.) Stir in the vanilla, then add the rice flour mix, xanthan gum, salt and baking powder. Mix everything together, then stick the bowl in the fridge for a few hours or overnight. 
Heat oven to 350. Form dough into small balls (dough will be stiff) and roll in confectioners sugar. Place 2" apart on a greased cookie sheet, and bake 10-12 minutes (just until they feel slightly firm when you touch the top of one). 
Makes about 3 dozen.

These look super good! I'm going to have to try them as soon as I get my grain mill and can grind my own rice flour. :) I'll be back to read more recipes!

Just found your blog and these made me smile. Chocolate crackles are one of my all time favorite Christmas cookies too (and my mom makes about a dozen different kinds).

Perhaps I'll make some for the hubby and me.

just made these.. double batch. reduced the sugar, used honey for a big chunk of it.

rolled them in ground almonds instead of the sugar. and .. and.. and..... they were AMAZING!
