Apple Crisp

I wanted to whip up a quick dessert that wasn't bars today, and remembered that I still have a bunch of apples. Too lazy for pie...how about a crisp!! It was delicious, I wish I had some ice cream to serve on top. I'll pick some up so I can have this with ice cream for breakfast. And good news! This can be vegan if you use a butter replacement!

Apple Crisp
From Cook's Illustrated, kind of

4 medium sized apples, peeled, cored, and cubed
1/4 c plus 1/3 c sugar, separated
two pinches of salt
1 t cinnamon
1/3 c brown sugar (packed)
1 1/4 c rice flour mix
1/2 t xanthan gum
7 T butter, melted

Preheat oven to 350. Combine the apples, 1/4 c sugar, one pinch of salt, and 1/2 t cinnamon and dump into a pie or tart pan. Stir together the remaining sugar, salt and cinnamon, with the brown sugar, rice flour and xanthan gum. Stir in the melted butter, and if it's still a little too floury, you can add a tablespoon or two of milk. Sprinkle the crumble mix over the apples, and bake for 45-50 minutes, until the apples are soft and the topping is crisp.
Serve with ice cream.

To make this vegan, use melted shortening, oil, or Earth Balance instead of butter, and soymilk instead of real milk at the end if you need to.

  8. I love the whole family of recipes from Cook's Illustrated. It looks really yummy! Apple crisp is one of my favorite recipe! We mostly got "SLUSH" here in southern lower Mich but heard more actual SNOW is on its way. YEY!!My little guy has his snowboard and sled all rearin' to go!! Your apple crisp filling looks so pretty in those jars mmm mmm! I tried that Chicken Potpie soup and it was a hit!

  9. Apple Crisp is the best! My husband and I like to top it with ice cream... I like it best with granny smith apples, but not everyone does! This dish is delicious.
