Mena's meatballs

I don't know who Mena was, but whoever she is, my mom got her meatball recipe. I've made them a few times, and surprisingly, they're gluten-free on purpose! No breadcrumbs, but instead, potatoes. I like these meatballs, they're simple to make and don't have any weird ingredients I don't always have around. They were so perfect for the meatball sandwiches I made with them, but that's a story for another time. Enjoy them in tomato sauce over pasta, at the ends of toothpicks for a crowd, or in a brown gravy.

Mena's meatballs

1/2 lb ground beef
1/2 lb ground pork (you can use one or the other if that's all you have)
3 eggs
4-5 cloves minced garlic
2 T chopped parsley
1/2 c grated parmesan
salt and pepper
1 c mashed potatoes (you can use instant, but use WAY less liquid, or the meatballs won't hold together)

Preheat the oven to 350. Mix together all the ingredients, and form into small balls (about the size of a quarter). Place in rows on a greased cookie sheet, and bake 10 minutes. Turn, and bake another 10-15 until no longer pink in the middle.

  1. I just made meatballs as well, but I cooked them on the stove in a pan. Ill try them in the oven next time. Thanks!
