Lazy daisy cake

This is an important weekend for people I love. My sister Dana turns 25 today, and tomorrow is mother's day! Everyone knows, or should know, that I love my mom. Both Dana and my mom are very important to me, and this cake is one that they both love. I wish I could make it up to see them on Sunday, but this whole 'being unemployed' thing isn't really leaving me with much money. 

I don't know where this recipe came from (do you, ma?) but it's around on the internet. I didn't look too hard, but the links I found didn't give a source. If you know it, let me know!

Lazy daisy cake
Recipe from my mom

2 eggs
1 t vanilla
1 c sugar
1 c flour mix
1 t baking powder
pinch of salt
1/2 c milk
4 T butter
3 T brown sugar
2 T cream
1/2 c pecans (or coconut, the recipe says)

Preheat oven to 350. Lightly grease and then dust an 8" square pan with flour. Beat the eggs with the vanilla, then slowly add in the sugar. Mix together the flour mix, baking powder, and salt, then beat into the egg mix. Heat the milk with 1 T butter just until the butter melts (I did it in the microwave for 45 seconds) and then mix into the batter. Pour into pan, and bake 25-30 minutes. 
While the cake is baking, combine the rest of the butter, brown sugar, and cream. Heat that until the butter is melted. Toast the pecans in a skillet until fragrant, then chop them up and toss with the brown sugar mixture. Pour over the cake when it comes out of the oven, then turn the heat up to broil. Stick the cake under the broiler for a minute or two, until the topping is bubbly. Cool and serve. 


  1. What is flour mix? Regular flour?

  2. I think she means a Gluten Free Flour Mix, like Tom's or Bobs Red Mill.

  3. No, I use the same flour mix in all my recipes, it's posted on the side of the page. You can substitute your own gluten-free mix if you'd like, but all my recipes are made with the same mix.
