1 recipe gluten-free tart crust (baked one time)
2 1/2 c blueberries (frozen is just fine!)
1/2 c sugar
2 t vanilla
2 T cornstarch
1 T butter, cut into little pieces
Mix together blueberries, sugar, vanilla and cornstarch. Let sit while the tart bakes the first time (25 minutes at 375), then pour berries into hot tart shell. Dot with pieces of butter. Bake 20 minutes or so, until berries are set and don't wiggle when pan is nudged. Cool, serve warm or cold with ice cream (or plain).
