Blueberry tart

I have a bag of wile Maine blueberries that have been in my freezer for too long. Today is a good day for something spring-timey, like a pie. I didn't want to roll out a pie crust. You know what's delicious? This tart crust. It's super easy, super quick to throw together (except that it needs to freeze for half an hour) and delicious. Alex raved about it last time I made it. I will be eating this for breakfast tomorrow. I had to stop myself from eating more than 2 slices. Yum. Go make this right now. 

Blueberry Tart

1 recipe gluten-free tart crust (baked one time)
2 1/2 c blueberries (frozen is just fine!)
1/2 c sugar
2 t vanilla
2 T cornstarch
1 T butter, cut into little pieces

Mix together blueberries, sugar, vanilla and cornstarch. Let sit while the tart bakes the first time (25 minutes at 375), then pour berries into hot tart shell. Dot with pieces of butter. Bake 20 minutes or so, until berries are set and don't wiggle when pan is nudged. Cool, serve warm or cold with ice cream (or plain). 


  1. Oh my gosh this looks so good. I too have a stash of summer blueberries in the freezer that have been waiting to be used for something special. This is going to be it! On another note, I am in the middle of making your cardamom ice cream desert - help! Are you calling for a half cup of dark roast coffee grounds, or brewed coffee? I am moving forward with using grounds. I am also unsure about the extra tablespoon of coffee. Did you add a brewed tablespoon, or again grounds. Thanks in advance for answering. I am testing this for an Indian dinner party, it looks simply over the top and I can't wait to get it all together and try it.

  2. The recipe for the coffee ice cream needs 1/2 c of dark coffee to be brewed into 1 c of coffee! Then the extra tablespoon (just ground coffee) is to be added right at the end, before churning/freezing. I hope I'm not too late!!

  4. This tart is making me miss summer. I am so desperate for some warm weather soon. The days of bluebery picking feels so far away.
