Red velvet whoopie pies


I jumped on the bandwagon. I couldn't help it. I was going to make something else (I'll make it later this week) for Valentine's day, but I couldn't. The pull was too strong. Mine aren't bright red like they maybe should be, because I don't love food coloring, and didn't feel comfortable using up a whole bottle to make some cookies. These are gooooooood. 
Red Velvet Whoopie Pies
This is the recipe that's been floating around the internet, made gluten-free. 

2 c flour mix
1/2 t xanthan gum
2 T cocoa powder
1 t baking soda
1/4 t salt 
1 stick butter, softened
1 c packed brown sugar
1 egg
1 t vanilla 
1/2 c buttermilk (I soured a cup of milk with a teaspoon of lemon juice)
1/2 - 1 bottle of red food coloring

Preheat oven to 375 degrees. Mix together the flour mix, xanthan gum, cocoa powder, baking soda and salt. Cream the butter and the sugar until light and fluffy, then beat in the egg and vanilla. Add the flour mix alternately with the buttermilk, starting and ending with the flour mix. Stir in the food coloring. Drop by teaspoonfuls on a cookie sheet lined with parchment paper, and bake 5-8 minutes. Cool on racks.

Marshmallow Cream

1/2 stick butter, softened
2/3 c powdered sugar
1 1/4 c marshmallow cream, like Fluff
1 t vanilla

Beat everything together, about 3 minutes, until smooth and creamy. Spread on one side of cooled cookies, then smoosh another one on top.

  3. Mmmm, looks good! Did you see my gluten-free red velvet cupcake I posted recently, sans food coloring? They weren't conventional but they were YUMMY! :)

  4. Holy. Moly. You so had me at Whoopie Pies :) These look soooo darn good! I haven't had a whoopie pie since 2002 and just realized how badly I NEED one - LOL. (Have any leftovers?!).

    what flour mix did you use for these? i'm interested in making a gluten free whoopie pie and i can't figure out what kind of flour to use!
