All-in-one bars


I stumbled upon this recipe (not technically a recipe, more like a method) yesterday morning and immediately bookmarked it. Little did I know I would make it for dessert that night! Later, I was trying to think up a dessert that would be pretty quick to whip up for dinner at my dads (where I am, visiting), and the conversation went something like this:
Me: What kind of desserts do you guys like here? Cookies? Cakes? Brownies? Pies?
Dad: Something easy.
Me: Square? Round? Bite-size? Nutty? Chocolate? Fruity? Messy? Peanut-buttery?
Dad: Not pie.
Me: How about brownies with cookies in them and chocolate ganache?
Dad: That sounds like something Benjamin (step-brother) would like.
Me: Sold.
Obviously I wasn't going to use Betty Crocker mixes (although I could have, they live in the cabinets here) because I wanted to participate in eating dessert. So I whipped up some brownies, then half of a recipe of chocolate chip cookies, and smashed them together. Woah.

And THEN! When getting ready to make the ganache, I was thinking about these peanut butter chocolate shortbread bars. Wait a second, why don't I make a peanut butter ganache layer? That was a good idea.
All-in-one Bars
I am calling them all-in-one bars because you have your brownies, you have your chocolate chip cookies, and then, on top, the peanutty chocolate bar of ganache.
1 1/4 sticks of butter, melted
1 c sugar
3/4 c cocoa powder
1/4 t salt
1 t vanilla
2 eggs
1/2 c flour mix
1/4 t xanthan gum
Preheat oven to 350. Mix together the butter, sugar, cocoa and salt. Beat in the vanilla and eggs, then the flour mix and xanthan gum. Spread in an 8x8 greased pan that's been lined with parchment paper.
Chocolate Chip Cookies
Previously posted here, halved

3/4 c flour mix
1/4 t xanthan gum
1/4 t baking soda
1/4 t salt
1/3 c sugar
4 T butter, softened
1 t vanilla
1 egg
1/2-3/4 c chocolate chips (I used minis)

Mix together flour mix, xanthan gum, baking soda, salt, and sugar. Smoosh in butter, then add vanilla and egg. Stir until completely combined, then add chips.

Drop tablespoons of cookie dough onto the brownie batter base. Press down on the tops of the blobs to make them mostly even with the brownie base, or smear them like I did. Bake 35-40 minutes, then cool completely (I cheated and stuck mine in the fridge).

Peanut Butter Ganache
1 c chocolate chips
2 T butter
3/4 c peanut butter
1 T corn syrup

Microwave everything together, 30 seconds at a time, stirring in between. When smooth, spread over the cooled bars and then let cool. We set them out in the snow, you might have more patience than I do. Good for you! Cut into small bars, and share, so you don't eat them all.

    Oh my. I am sick just thinking about how much I WANT to eat those. I am a dessert lover suffering through the south beach diet. I promise, this will be the FIRST thing I make when I reach my goal weight(and then hit the eliptical for an hour!) Thanks for the great idea!

  5. Those look spectacular! I am like you ... can't wait for cooling usually (hey, maybe that's why I make cookies so much!). I'll just set the pan on our screened porch (our auxiliary refrigerator/freeze during the winter) or in the freezer during hot weather.

    I just made these and they came out great! The frosting is absolutely delicious. Thank you for this recipe! My family will not believe that these are gluten free.
