Sweet Corn Pudding

Even though it's been pretty warm here, it is miserable outside tonight. Alex rode his bike to school and when he got home he was soaked and miserable. Luckily I am wonderful and prepared him a hot comforting meal, including this corn 'pudding'. The recipe I used was for a sweeter pudding, but I decreased the sugar and added cheese and pepper. Next time I might add some diced onion and maybe a tiny bit of hot sauce. This took oh, about 2 minutes to whip together, then I left it alone in the oven for an hour and that was it! I love things like that. 


Sweet Corn Pudding
Based off the recipe on Cakespy's awesome post on presidential holiday desserts

1 T rice flour
2 eggs
1 T sugar
3/4 t salt
1/4 t pepper
3/4 c milk
2 T butter, melted
1/2 c grated cheese (or more)
2 c corn (I used frozen)

Preheat oven to 375 and grease a small casserole dish. Mix together rice flour, eggs, sugar, salt, pepper, milk, and butter together until smooth. Stir in cheese and corn, pour into casserole, and bake about an hour, until no longer jiggly in the center.

I was coming here to congradulate you on completing your everyday November blogging challenge, but here you are with TWO new yummy posts. my goodness. well all I can say is keep them coming!

This corn recipe is something I think my boyfriend would love, and I'm going to have to try it out for him this week. I'll let you know how it goes!

Thanks Dana! I really didn't think Alex would like this, because he doesn't like cornbread or really any other corn-y things besides corn on the cob, but he loved this! So did I. Let me know how it goes!

Yum! My mom makes a very similar dish, but she calls it the not-so-PC "Indian Corn Pudding." Yours looks great! I like the idea of adding a little hot sauce.

Yours has a wonderful consistency!! I really enjoyed the sweet corn pudding, more than I thought I would! Glad you enjoyed it too!! TJ (you know, Thomas Jefferson) would totally dig this! :-)

I made this last week! delicious. I left out the sugar, since I wanted it to be savory
