Good breakfast for a lazy Sunday

When I was at my moms, she made me soft boiled eggs. I don't know the last time I had soft boiled eggs. Who knew they were so delicious! I had forgotten. Yesterday morning I was woken up by the terrible, pounding rain a lot earlier than I had planned. I spent a few hours in bed playing on the internet and half watching movies on tv, then got hungry. I wanted a traditional breakfast. Eggs, bacon, coffee. By the time I had gotten out of bed and cleaned the kitchen enough to make breakfast, it was too late for coffee. And, I'd forgotten to make any. The night before I had made a big batch of tea to make iced tea with, so I had that. It was perfect, just what I wanted. 
Soft Boiled Eggs
1-2 eggs per person
water
salt and pepper
a little pat of butter for each egg

Run eggs under warm water until they no longer feel cold. Alternately, put eggs in a glass and fill with hot (from the tap, not boiling) water and let sit for a few minutes, OR leave eggs out to become about room temperature. Put water in a saucepan (just enough to cover the eggs). Cover and bring to a boil, then as soon as the water is boiling remove the lid and turn heat down to medium-low, then add the eggs. Cook 4 minutes (for a large egg, with a runny center), and then run cold water into the pot until the water is cool. Put eggs in egg cups (I don't have any, so I used a little candleholder) and tap around the top to break the shell. Peel the shell away on the top and scoop a bit off, sprinkle with salt and pepper, and put a tiny bit of butter in each egg. Eat immediately. 

Best served with bacon and iced tea or coffee.

  1. You know, I don't think I've ever had a soft boiled egg. Now I'd really like to try. (I went through a whole "eggs creep me out thing" well through my late teens. Things changed roughly around the whole gluten free business started; I guess I have a lot to catch up on!)

    Your pictures are really pretty. And also, congrats to you for making it through half of November with daily posts! Such an accomplishment!

  2. They're really good if you only like hard boiled eggs for the whites, and if you love runny yolks like I do. Thanks! The posting everyday was hard when I first went back to work, but now I've been writing a bunch of posts ahead of time so I have posts to throw up if I don't make anything or nothing happens that's interesting. I'm going to try to keep posting more even after November's over, I've been slacking.

  3. I looooove soft boiled eggs. I eat them all the time! I scoop them out of the shell, cut them up in a bowl and eat them on toast. YUM
