Dutch Baby Pancakes

Why, oh why, didn't anyone tell me about Dutch babies earlier? I'm from New England, I grew up on popovers (actually, I think they're one of the first things I learned to bake, back in Home Ec. Do they still even have Home Ec?) and I love eggy things like this. I found this recipe on the Wholefoods website and made it for breakfast (lunch) today. It was so delicious. I bet it'd be good with fruit, but I just ate it how it was with powdered sugar on top. It kind of stuck to the pan but oh well. Mine was a lot puffier when I first took it out of the oven but delicious anyway. 
Dutch Baby
2 T butter
4 eggs (room temp)
1/2 c rice flour mix
1/2 c milk
a pinch of salt

Preheat oven to 425. Place butter in a cast iron skillet and stick it in the oven while you whip up the batter. Combine eggs, rice flour mix, milk and salt in the blender or food processor and pulse for 30 seconds. Pour into hot pan with the melted butter, and bake for 20 minutes. Do not open the oven door until it's time to take it out or else it will fall! Sprinkle with powdered sugar and serve immediately.

This looks/sounds delightful! I'm thinking this blueberry compote I have a recipe for would just do the trick! YUMMY!

WOW awesome! I will eat these all the time now. I wish I wasn't too tired to go to the store for eggs!!
