

Recipe from the Baker's Chocolate box, which I couldn't find online.
4 oz unsweetened baking chocolate (4 squares)
1 stick butter
2 c sugar
3 eggs
1 t vanilla
1 c rice flour
1/4 t xanthan gum
1 pint ice cream (I used vanilla but mint, nut, anything would be good)
Preheat oven to 350. Line a cookie sheet with foil and lightly grease. Melt chocolate and butter in the microwave. Stir in sugar, eggs, and vanilla. Add flour and xanthan gum, stir, and spread thinly in the pan. Bake 20-30 minutes. Lift brownies and foil out of the pan and put on a rack to cool completely. Once almost cooled, take the ice cream our of the freezer to soften. Line a pan that's half the size fo your cookie sheet with foil. Cut cooled brownies in half and press half into the new small pan. Spread with softened ice cream, lay remaining brownies on top, and put in the freezer for an hour or two. Remove from pan, cut into small squares, and wrap individual sandwiches with wax paper. Makes about 15.
Well Well, it just so happens that I have a bag of Bob's Red Mill gluten free brownies waiting to be baked!
