swedish apple cake

Sorry I haven't been aorund in a bit, my camera battery died and I'm having trouble finding a new one (but, I ordered one from the internet, so it should be here ...within a few weeks). In the meantime, I'm using my crappy old digital camera. My sister is here for the weekend and Alex and I both took today off so we can all hang out, and I made this cake for breakfast. It's a breakfast cake! I wrote down this recipe a while ago and then promptly lost it, so I was excited when I found it yesterday. Just in time for a lazy Saturday off! It's something I will definitely make again, it was super fast to put together and tastes great. Its pretty almond-y, with a crisp crust from the cast iron, and a nice moist, slightly dense cake. The apples could be replaced with sliced almonds, if you like that sort of thing.
Also everyone should definitely make Kate's fake HoHo cake, because its AWESOME. I made it once, it was quickly devoured, and I made it again for Dana who had seen it and was interested in it. We ate a good portion of it last night, after the bar, and I can't wait to eat more later! It's a lot easier than you'd think.

Swedish Apple cake

1 c sugar
2 eggs
pinch of salt
1 t vanilla
1 t almond extract
1 c flour mix
1/2 t xanthan gum
3/4 stick of butter, melted
3 T applesauce
1 apple, cut into thin slices

Butter your cast iron pan and place in a hot 350 degree oven. Mix sugar and eggs in a bowl, then add salt and extracts. Stir in butter, then flour mix and xanthan gum, then applesauce. Working quickly, pour the batter into the hot pan and lay the apples on top, sprinkle top with sugar, then bake 30 minutes until puffed and brown. Let cool in pan, and then eat with tea.

    alex- its on the lefthand side of the page- 2 c rice flours, 1/3 c tapioca starch, 2/3 c potato starch, but if you're not gluten-free you could just make it with regular white or wheat flour!

  5. I used to make "Swedish Apple Pie" from the Boston Museum of Fine Arts cookbook. It doesn't have so much sugar and no butter, so it's much healthier. Try it!

    1 egg
    1/2 tsp. cinnamon
    3/4 c. sugar
    1/4 tsp. vanilla
    1/2 c. flour (I'm sure your flour mix would be fine)
    1 cup chopped apples
    1tsp. baking powder
    1 c. chopped nuts
    1/4 tsp. salt

    Beat egg 'til lemon colored. Blend in remaining ingredients. Spoon into greased 9" pie plate. Bake at 350 for 30 minutes. Top with ice cream or vanilla ice cream.
